
I made this 3-layer coconut cream cake to celebrate our 28-year wedding anniversary last month. Toasting the coconut that I put on the frosting was my idea and really added an extra boost of coconut flavor. I love sharing cake with my husband Jim. YUM!
P.S. I made the little paper hearts out of card stock and designer paper from my craft room. These are 3 out of about 35 that I made and hid around the house as reminders to Jim that I love him with all my heart. (He’s only found about half so my guess is he’ll be finding them for months, if not years, to come!)
